Why it works for streamers
Streaming generates an enormous amount of content and monetises almost none of it directly. The live stream earns through subscriptions and donations, and everything else — the VODs, the highlights, the clips that performed — falls into an archive nobody revisits. Meanwhile the audience that would pay for a curated version of it is already assembled and already watching.
Packaging the archive is the obvious move that most streamers skip.
